In order to learn all the secrets of coffee, while tasting it we use all four senses given to us by nature.
This is the first sense activated right after making coffee, facilitating its evaluation by colour, density and crema espresso structure.
We experience the unique aroma of espresso through our sense of smell. Extracted slowly and gradually, the lightest and most intense odours, one after another, right after brewing, create a distinctive bouquet all over the room.
One of the factors activating the sense of taste at the beginning of coffee tasting is espresso crema, described as ‘rich’ when it is from 2 to 4 ml. in height, melting slowly and delicately in the mouth.
Moreover, the balanced and characteristic aftertaste of Italian espresso which remains after the first sip is a sign of well-made, high-quality coffee. In order to taste coffee better and enjoy its taste values, it is also worth understanding the map of the tongue. Awareness of the differences in taste sensitivity in its various zones increases our perception of different tastes and the degree of their influence.
